mango rum cake



The recipe for this made way too thick of a batter. Since I thought that would mean dry cake, I added more oil and a bit more mango and it came out just right. Sometimes it's good to just have an idea of what something "should" look like. It can help so much, and no let you fall into the rut of always taking a recipe literally.



This smelled unbelievably tropical and lush. The smell that this permeated the house with actually made me feel like some kind of mad scientist.

basically, 1 cup chopped mango at the bottom of a well-greased bundt pan. batter was really simple: 1 box yellow cake mix, 3 eggs, 1/4 cup melted butter, 2 tbsp water, 1/2 cup light rum, 1 cup pureed mango...added a few tablespoons of oil. bake at 375 for about 45 minutes. lovely. i really like alcoholic cooking.



let cool completely before removing. shown served with rum-spiked whipped cream and just a couple of mint leaves. dessert veg <3
