so baked

pina colada cheesecake all ready to roll with a caramel sauce made at the last minute. the shiny yellow glaze is lemon juice, canned crushed pineapple in its juice, sugar and cornstarch. the caramel sauce was just brown sugar bubbling away with some butter and more coconut extract.



this was what i ate. cole slaw made with cabbage, carrots, broccoli, miracle whip, green onions, tapatio, a touch of honey, rice wine vinegar and a hint of soy sauce. don't hate. it was delish. sweet, creamy and spicy. and on top is some shrimp i roasted in the oven with a ton of spices - chili powder, cumin, paprika, garlic powder, black pepper...mixed in so nicely with the coolness of the slaw. simple, but healthy and really tasty.

next time, i'm not using purple. the color really drags down the vibrancy of the other colors, and overtakes it. i've made prettier. but the house smells like butter, so that's good.
