Back at mom and dad's for a little bit, which means a real stove, real counter space, a 2-sided sink, full fridge, stocked spice cabinets, and wonderful hungry parents who love when I cook for them. Annnd no work or classes.
Soup day. Left: all veggie detox soup. Right: Chorizo and Shrimp Pasole.
Started with chorizo taken out of the casing and browned. Added green bell pepper, onion, celery, and fresh garlic. Cooked in chorizo fat goodness. Salt and pepper.
When veggies got wilty with chorizo fat, hominy (kinda puffed corn stuff), stewed tomatoes, large raw shrimp, and stock were added. And a ton of spices. And cilantro. And scallions.
With some gosh-dang quesadillas.
