yet more christmas treats

i'm standing in my kitchen, listening to chromeo and passion pit. it smells like maple and chocolate. the heels of my feet are sore from standing here baking. diet lemonade. tuesday morning before christmas.
i'm about to get the last of the cocoa spritz cookies off of the pan, but i already took some pictures just so i don't forget to do it.

this is some weird upside down danish-like cake thing i made with a package of pillsbury grands biscuits. those things always sit in our fridge for too long, and they make such a wonderful recipe base, be it sweet or savory.
i went extra sweet with this one. on the bottom is a syrup of butter, brown sugar and maple. followed by layers of the grands, topped with a coconut, cream cheese, powdered sugar, butter mixture, and then topped again with biscuit, topped again with coconut cream cheese goo. bake til golden, sizzling and almost intoxicatingly fragrant. about 29 minutes. that's just me.

  1. I love spritz cookies and have a cookie gun but I've never been able to make them looks this good! I don't know if it's the cookie dough or my spritzing technique . . .

    Love anything that has both maple syrup, coconut and cream cheese - now wonder mom was so happy!

  2. i make mine a little unusual and add 3 egg yolks instead of one egg...

    2.5 cups of flower
    1 cup butter
    3/4-1 cup sugar
    1 tsp vanilla extract
    1.5 tsp almond extract
    1/2 tsp salt
    3 egg yolks, one egg white

    something like that! halfway into spritzing, i add a little cocoa powder and a touch more vanilla and then spritz the rest

    hopefully this helps some! i bake mine longer than the usual 8 minutes...closer to about 14 at 350 degrees but my oven might be weak. <3
