Big Vegan Dinner

Grocery shopped at Winco. Had to buy a skillet and a baking sheet because the old roommates took those. Cooked up a frenzy while Matt came over and studied and did his laundry.



Peanut butter cookies! The ones I normally make...1.5 cups flour, 1/2 cup sugar, 1/3 cup corn syrup, 1/2 cup (heaping cup! all natural freshly churned peanut butter with dainty little crispy peanut fragments), 1.5 tsp vanilla, 1/2 tsp salt, uhhh...some small measurement of baking soda, 1 tbsp soymilk...Feel like I'm forgetting something I put in...ah...shortening. 1/2 cup.



Champagne and pineapple soaked fruit salad. A little lemon juice too because the pineapple is so sweet. Mango, peach, grapes, strawberries, banana. I love how the banana makes a little bit of starchy lovin to the fruit and they pick up its flavor.

Winco's bulk bins are a lifesaver.



Huge salad! Iceberg, cabbage, carrots, celery, tomato, chopped dates, walnuts, sunflower seeds, nutritional yeast, garlic croutons and a light vinaigrette. Most of the chunks of variety fell to the bottom, so they'll go mostly unseen...



I roasted some cauliflower in the oven with olive oil, salt and pepper until it got very sweet and caramelized. Also sauteed yellow onion and mushroom with wine, salt, pepper and garlic. The WINE mixed with olive oil and the earthy mushrooms does something fabulous. I have a total of four plates, so I decided to just plate these together.



Pan-fried tofu! Drained on paper towels for a couple hours to remove excess moisture and give a heavier meaty texture. Marinated in just soy sauce, garlic powder and pepper. Something about the soy sauce soaking in for awhile actually gives a kind of nutty savory crust...umami?



Mom sent me this great coffee/tea cup thing. And I found this curry powder piece at Anthropologie for 1.95. I'm an Anthropologie sucker...to the point that I've accidentally spelled the actual word "anthropology" with an "ie" on accident.



Using my hot pads made for me by Kaylie! They make me feel wonderful just looking at them.



Curried Lentil Soup! I really love this one. I wanted to make my grandmother's red lentil soup, but didn't have the recipe and was feeling very curry-esque. Found coconut milk in my pantry which is always awesome. Kinda used the red lentil soup as the idea though...red lentils, carrot, onion, garlic, ginger, celery, curry powder (sweet, sweet, wonderful curry powder I brought back from Hungary way back when), fresh honey (from Jammie!), light coconut milk, vegetable broth, salt, pepper. Garnished with green onions and cayenne pepper. Cooked in the Crock Pot. Pureed in blender. Creamy, sweet, warm, spicy comfort.

Peanut dipping sauce for panfried tofu, and whatever else this would do well with...probably most things. Same fresh peanut butter, soy sauce, honey, garlic, pepper and a splash of water.
